Queijo Prato is a Brazilian soft cheese, similar to the Danish cheese Danbo. It is one of the most popular cheeses in Brazil, and was introduced by Danish immigrants in the Minas Gerais state.[1] Since the method to produce Prato cheese was the same as Danbo cheese, the differences are attributed to milk characteristics[2]. It is characterized by low salt and lactose content, yellow color and soft taste.[3]
